Personally, I like the taste. I definitely prefer it to vegetable oil and even olive oil in certain recipes. Then recently, I started back at the gym, which inevitably leads me to check everything in my cabinet for “healthyness.” I did have some concerns about saturated fat content. It turns out coconut oil was recommended by both my nutritionist and weight trainer. My trainer has me eating a tablespoon raw before bed, and says it will help my body burn fat even in my sleep. Go figure? It’s nice when something you enjoy turns out to be healthy too.
Cool man, that's surprising. I've never tried it but will definitely give it a try. I like trying out different oils. I bought some grapeseed oil a few weeks ago as it has a higher flash point than oil oil and good for cooking at high heats.
I've learned to buy small amounts of oil as I don't use it too often and after a few years I imagine it goes bad, but actually I don't know the shelf life. I'm doing the same for honey too:

Huh, I scoped out some coconut oil today at the market and its interesting because the jar I saw was white, not yellowish like many other oils.
I didn't buy it as it was $6 for a pretty big jar. I'll check out some other markets around and try to find a smaller size to try.

That's a pretty decent price I pay between 8 and 10. I think the color difference may have to do with refined vs. unrefined.
