WARNING: Real cooks and chefs from New Orleans and beyond may scoff at this!
I'm not even sure this is jambalaya, but in my naïveté, its the best title I could come up with this decent recipe I made up as I went along.
It came about like this:
- It was a good football day, so I decided to cook some meat
- I started off with seasoned burgers for lunch
- I had planned sausage pizza, but soon realized I was still stuff from lunch
- I had some rice still warm in the cooker from the pacific flounder dinner I cooked the night before
- I was rooting for the Saints
I sauteed some onions and peppers, rounded up some Sourthern spices, opened and added a can of kidney beans, added the rice and some previously cooked and sliced sweet pork sausage. I would have preferred spicy, but couldn't find any.
I let it heat and meld for awhile - the result was very good! Next time it needs more seasoning though.
